Alternative types of flour?

Hi,

I'm looking for alternative types of flour i can use to bake - whether its bread, cake, muffins, pastry , pizza base etc. My local health food type shop stocks the below flours. Anyone got any advise as to which are low carb and what i can use them for
  • Teff flour
  • green pea flour
  • yellow pea flour
  • fava bean flour
  • white quinoa flour
I did buy a bag of coconut flour but have no idea what to make with it?

I can't help I'm afraid, but I have almond and coconut flour and coconut sugar. Now to find a recipe for a birthday cake for my daughter that I won't feel guilty about eating a little of. My daughter isn't diabetic but (in her 30's) and likes to keep to a healthy lifestyle.
Following with interest.
 
Hello MrsMoose. Have a look around on here among the recipes to see what substitutes people use. I stick with almond flour for cakes and pancake mix. I've abandoned all the others as too carby. Coconut flour may be ok but I don't like it. Since almond flour is expensive I don't have cake or pancakes very often, but I do like a nice mug cake (no flour, one egg, five minutes).
 
Hi, what's a mug cake?
One egg, half tsp baking powder, half tsp cocoa powder, sweetener to taste (I use 1 tsp xylitol), 2 good tsps lowest carb peanut butter you can find, mix well till smooth in a mug or small bowl, microwave 50 secs. Add double cream.

I use a mix of almond flour, coconut flour and flaxmeal for baking and am having good results with cakes biscuits and pancakes
My mix is
2/3 cup each of almond flour,coconut flour, ground golden flax seeds.
It has a nice mouth feel. Some of the mixes with coconut flour are way to dry and taste of coconut.
Most cake recipes you need to use extra wet ingredients like eggs or milk as coconut flour absorbs a lot of liquid.
I use it cup for cup, add 1/2 to 1 teaspoon of baking powder and extra eggs, melted butter or milk or milk alternatives.
Makes really tasty pancakes, mug cakes, cakes etc
