I know say that people go into denial about being a diabetic, but would you say that it sounds like I am diabetic or not and can you become "not diabetic" with diet?
There are no doctors on this forum, as far as I am aware, and if there were they still couldnt diagnose you over the internet, only your doctor can do that as he/she has all your medical history and is a position to carry out the necessary tests.
Many newly diagnosed diabetics go through a period of deniel that is true, another common emotion is anger, these emotions are other reasons to visit your doctor.

Recently was given a diabetic retinopathy test which showed my eyes to be perfectly normal.
I am just a little confused.
A yearly retinopathy test is offered to every diabetic, the fact that yours is normal shows that there is no retinopathy present at present which is good news that you should be happy with but is not a sign that you are not diabetic.
Diabetes is a 'for life' condition, once you have it it will never go away and there is not presently any cure, it can be controlled however initially with diet, and possibly medication and for some by the use of insulin it really depends on your diabetes, some people believe that diabetes is always progressive but that has been proved not to be the case if it is well controlled, but ignored or badly controlled diabetes will get worse, I dont think there is any argument there.
There is an abundance of diet information on this site but the newly diagnosed guide is a good starting point. It is not just sugar that you need to be aware of but carbohydrates as well as there are converted 100% into glucose by your stomach and so affect your blood glucose levels the same as sugar, just a little slower as they have to be broken down first before they can enter the blood stream.
Get on top of your condition now and don't ignore it is the best advise I can give you
