Another good recipe

soaps on telly and people talking about the characters as if they were real.
this is an old Czech one, but practically carbfree. Makes a lovely dip for raw veggies.
Roshuda The s and h are pronounced separately not the English ~sh sound
ingredients
1 tub curd cheese.(you could substitute Quark NOT cottage cheese,the texture's wrong)
Some cream ( amount varies, but 3 or 4 tablespoons should be enough)
I small onion or shallot finely chopped
couple of tablespoonsful fresh chopped chives ( or spring onion green)
Teaspoon sweet paprika (the smoky Spanish one is lovely)
salt to tast
Method
In a bowl using a wooden spoon, beat cream into cheese adding gradually until your preferred "dipping" consistency is achieved.
Mix in all other ingredients in thoroughly
It should now be a pretty shade of pink, with green bits.
fatphobes can substitute natural yoghurt for cream.
This is as good on crackers as on raw carrot.
 
Add chopped capers and a bit of chopped caraway seeds, garlic if you like, thanks Hanadr I had forgotten about this, going to have it later today, with raw carrots, celery sticks, cucumber, peppers

If you fancy something a bit different try cooking with cucumbers

2 cucumbers
150g smoked bacon - chopped
3 tbsp creme fraiche
150g cheese (any cheese, strong or mild), grated - I have made this with less cheese & still works ok
parsley or dill or basil or coriander - chopped
garlic
salt and freshly ground pepper

Slice cucumber into fairly thick slices, fry the bacon, crushed garlic, then add cucumber slices for just a couple of minutes, add the seasoning and herbs, cover and let it sautee for about 10 minutes, stir in creme fraiche, sprinkle with cheese and grill until the cheese is bubbling and slightly browned.
Goes well with meat and fish or even on its own as a light lunch.

Hana you will know this one:

Onion, finely chopped
Cucumbers, cubed
Soured cream or creme fraiche mixed with one spoon of flour
Fresh dill
1/2tsp french mustard/dash of vinegar or some lemon juice/pinch of sugar
salt, freshly ground pepper

Fry the onion until soft and golden, but not brown, add cucumber cubes, fry for a minute, add about 100ml stock or water, add all the rest of the ingredients except the dill, sautee until cucumbers are soft but not mushy, adjust seasoning, add dill.
Goes well with fish and chicken and meatloaf.
