Another Newbie Joins The Ranks

Hello everyone,

My name is Kat and I was diagnosed with type 2 about a month ago. I had gestational diabetes during my pregnancy, so the shock wasn't so terrible. I have successfully brought my numbers down with Metformin and diet, although I am restricting Carbs quite a bit. (20 gms or less daily). I am afraid of what will happen if I slip and have a large carb meal. The problem is I am already quite bored with meal options, and, as another challenge my family adores pasta and carbs, and making 2 meals is exhausting. I am finding myself just grabbing low carb things throughout the day to eat and not ever having an actual meal. My time is limited also which makes it difficult to prepare menus. Hoping to adjust and find my niche, and looking forward to conversing with everyone here on the boards :)
 
Convert the family to low carb and you can all eat together again and they will get healthier as well.. win win.
 
Hi... I'm also new here and I've been on the LCHF for a month or so now.. I'm struggling with the same as you also.. my family don't like courgettes and all the meals I'm eating so I'm having to cook different meals which is a pain. ... I'm not going to give up though
 
After 4 months strict <20gr low carb I had some chinese takeout. I did not eat any rice or noodles just the meat and veg. I went from 5.8 to 11 . I almost never see anything over 7.
 
@redkat420 - Hello and Welcome to the Forum. If you go to the top of this page and click on the word FORUMS, scroll down until you come to FOOD and NUTRITION - there you will see all different headings for various diets etc. Just click on and have a look through, hope this is of some help. :)
 
I would love for them to go low carb! Prying the pasta out of their hands has proven quite difficult :woot: And along with Maxjoe 121, they are not thrilled with what I cook. I'm going to keep trying to convert them though!
 
I have been eating LC for over a year now so I can understand the challenges with family ect. I reached a point a few months back where I just gave up as it was all too much to cope with. I am now back on track thankfully. I found loads of great recipes on Pinterest and I try to always have baking in the freezer.
