In fact I've just made a Lime and Mascapone Cheesecake which is delicious - unfortunately it's not for me but for a 'non-diabetic' friend who asked me to make it for her husband and grandson who loved it when I served it at a barbeque a couple of weeks ago - oh well at least I got to lick the bowl!
