I'm struggling with it day in day out ... one day just the thought made me feel sick. I can't eat cheese so I'm eating lettuce, cucumber and the odd spring onion with either chicken or fish and a dollop of mayo .. It's been difficult for 4 weeks, the thought of it being lunch forever is so depressing! Ideas?

Homemade soup in a flask, like watercress and spinach, broccoli and stilton. Frittata made with bacon. Crudites with lemon mayo. Greek yogurt with nuts and berries. Tapas style - boiled egg with olives, peprami or cold cuts, cheese, pickled veg (you can get jars of those) tomato, cucumber, marinated peppers and mushrooms, etc.
I'm sure others will along with more suggestions.

Try oatcakes for a change.

I use the oatcakes from Aldi, as a norm I'd have four either buttered or with x2 Dairlylee Light triangles (half a triangle on each), the Dairlylee option shows little impact on my BG +2hrs. :D

Homemade soups as already mentioned

Chicken casserole (no potatoes) in a flask. Great in the winter but good all year round. I dont like salad so this a good alternative for me. You could make any meat based recipes

All the salmi's and dry cured hams such as pama or sorento are great. Chirazo is good if you like spicy. Or try your favourite sandwich without the bread , and spend an hour dreaming about the different breads it could have been wrapped in. You have to be a bit sad to try the last idea , but it is surprising how well you remember how bread used to taste ( I've not had any for over 3 years)

Salad Wraps. Anything you used to put between bits of bread you can try wrapping in lettuce.

thanks all

just thinking about the wrapping in lettuce ... is hummus ok? I loved salad and hummus wraps ...

I really don't like lettuce, but I now have it every work day in a salad. I think regular lettuce is a bit bland so buy a mix in a bag. I have 40 grams and cut it up into small 1 inch squares, a chunk of cucumber, cherry tomatoes (I choose multicoloured ones to make it more interesting), spring onions, sugar snap peas and silverskin pickled onions (I could have peppers or celery but I don't like them). To ring the changes I have ham, cheese, cold sausages or quiche without the pastry on a rotational basis. This all get mixed together in a plastic container with a small teaspoon of pickle (but you could add mayo or vinegarette).

Salads don't have to be boring, you have to think about all those carbs that other people have in sandwiches and how much better for you the salad is. I find what I have quite filling. I think I have a mental block about lettuce as it was always associated with dieting.

I take a pot of salad to work with me too.
Tesco do pots of Egg & Bacon Deli sandwich filler and a dollop of it in the mixture makes it really tasty.

Regards
Angie

Depends on how many carbs you want...

Egg mayo - I chop up a couple of eggs, mix a spoonful of mayo (Sainsburys organic is the lowest I have found) a few chives or chopped spring onion and a couple of cherry toms.
Avocado and walnut - mixed in with full fat cottage cheese, some spring onions or chives and the juice of a lime
humus and carrot sticks or cucumber, so long as you can tolerate them
stilton and cucumber chuncks
home made fritatta (asparagus is in season!)
left overs from last night that you can heat up in the microwave
pizza - there are some good low carb recipies, there is a nice pizza "crust" in the Low Carb gourmet

M&S do some nice pre-prepared salads with nice dressings in the salad section NOT the lunch section

I love salads. However, if you have mixed feelings about them consider what kind of salads you are eating. I like colourful strong flavours. There is a mixed rocket, spinach and watercress pre-prepared salad, a lovely bistro salad with grated beetroot in most supermarkets.

I make a Greek style salad - various chopped raw veg including cucumber, cherry toms, red, yellow and green pepper, spring onion with olives and a lemon juice and olive oil dressing and crumbled feta cheese, but you could add another protien source.

The thing with salad is learning to make a decent dressing. If you like mayo, learn to make your own or experiement with different brands as the flavours vary a lot - as do the carb content. I do use some slightly carbier ingedients in my dressings, including balsamic vinegar and honey, but it is a flavouring and does not significantly add to the carbs in the quantity used.

Experiment with differnt oils such as olive oils, truffle oil, nut oils like walnut and differnent vinegars like cider vinegar and wine vinegars. Learn to make infusions of both oil and vinegar. Fresh tarragon or raspberries in vinegar, garlic and chilli in oil. Experiement! Keep it simple.

Hi again.
Try looking at the Tiana coconut product web site. and go to the coconut flour recipy section. There are loads of good ideas . I use the cheese muffin mix, which works out at about 1.8 gr carb per muffin. You can exchange the cheese for anything else, such as a few blue berry's. Be careful of the recipies including honey or sugar. I've just spotted the meat loaf that looks very good. and the brownie mix may work without the sugar or a little coconut nectar to add sweetness. One full teaspoon of coconut nectar will raise my blood sugar by approx 1mmol. But 1/8 to 1/4 teaspoon is plenty in tea or coffee for a treat.
The coconut products are not cheap but they do go along way
