Been looking longingly at this thread since it posted.
I can't do crumble as I can't eat gluten, but I can get away with one or two apples a day, providing I keep the rest of my carbs to nonexistent.
It's just occurred to me to get hold of some of this thing beginning with X and try to put some sort of crumble type thing on apple, using crushed nuts.
There are plenty of things out there that tick both boxes. I do find that I get really fed up with them really quickly though. - Sometimes you just want something nice. Something sweet with a comforting texture, and there isn't anything. Depressing.
If you search around here, there are lots of low carb recipes. I haven't checked them out for gluten but it's worth a look. That's where I'll be heading when I get some free time to experiment.
Hi hornplayer. Have you tried almond flour to make topping for crumbles, and I also use coconut sugar low GI. Can you tolarate spelt flour? I can but only now and again.
I have been making stewed blueberries, just put them in a saucepan with sweetener or coconut sugar and a tiny bit of water and bring to the boil slowly, really nice poured over tesco creamy greek youghert its a new one.
Haven't tried almond flour yet, it's on the list though!
How do you guys get on with apples?
I'm starting to think I must be weird. - Yesterday my BG was 10.5 when I woke up. ( yes, I know that isn't good.) Hour and a half after a carb free breakfast I tested again coz I didn't feel well and it was 12.6. I ate an apple and a piece of cheese and two hours later it was 6.8. - it might seem odd that I ate when my BG was that high but for some reason in the mornings my BG keeps climbing until I eat something. - some times, like yesterday, it just keeps climbing regardless .
Anyone got any ideas? - Apples really seem to bring my BG down. Does anyone else find that happening or am I really as weird as I think I might be???
Hi
You should be able to produce a good crumble using a gluten free flour. If you want to reduce the carbs then make your mixture and spread it out on a tray and bake until golden. You can then break up the mixture and sprinkle on top of your cooked fruit. I have used it on yoghurt it gives a nice crunch and will keep well in a sealed pot, need to ensure fairly dry in texture.
i go through tonnes of almond flour in my cooking, i made an amzing carrot cake yesterday with it, never tried apples, i just gave them up straight away as i started low carbing so never tested them
I avoided apples to start with too Andy, especially as I have a really bad spike with strawberries. But apples not only seem to bring my BG down almost immediately, they have also stopped dead all Metformin related stomach issues.
