I don't eat pasta either as I dislike how it makes me feel after. I like a jacket pot, sometimes with tuna? I don't know. I only found out yesterday so we're talking JackanoryBefore you eat, one and two hours after.

ooooooooooooh Thank youI find a medium jacket potato is fine for me, but that's just me - if you're new to this, you can't really beat trying things out and measuring your BG to see how it goes. It's all down to which gut bacteria you have in and in what proportion - some people will digest different things quickly, others slowly. You need to figure it out for yourself.
On the cheese front - if it's toasty cheese you crave, (and I totally sympathise), have you tried parmesan crisps? You can eat them with various dips - my favourites are taramasalata and guacamole. http://www.bbcgoodfood.com/recipes/10148/parmesan-crisps
