BAKED CAULIFLOWER PARMESAN

Hello all,

Decided today is "happy cooking in the kitchen" so have passed a couple of other threads re Foods, to enjoy try or simply ignore if you wish.

You can use these when friends pop by, to nibble on and put into dips. Here below I share my own Guacamole recipe given from a friend who resides in a Pueblo village so its authentic real authentic recipe, you can use the caulifour parmesans to dip into instead of the normal Mexican corn chips, as substitute, and also if you make a batch of the seed crackers by diet doctor which is on their website, they too are fantastic! for dipping into the likes of a yummie guacamole.

Here comes the Guacamole.

1.
Two large avocadoes put in a bowl

Add finely chopped onion

Add 3 gloves, yes 3 cloves garlic fresh, chopped very small
4.
Add 2 toms finely chopped with "skins" very important to give Guts to the guacamole
5.
Add good slurp virgin olive oil about 2 tablespoons or to preferred taste
6.
Good amount black pepper, sea salt, and 1 chili "optional" for taste, I always put it in that's the original recipe way.
7.
Squeeze of lemon

Mash it all with a fork, I repeat please a fork, don't put it into the blender to make it smooth, I know many probably enjoy a more smoother variety of Guacamole, which is nice, this recipe is the real thing, and it has to have chunky bits of onion and toms the way the "real locals" eat it in Mexico in the out of the tourist villages.

Hope you enjoy, and as within, either the Cauliflower nibbles and/or the super seed crackers go really well, when guests arrive so those of us watching our carbs, we can enjoy without "guilt" as well...
