For weeks I have been trawling the internet to find a basic muffin recipe which uses Stevia instead of sugar, and is low carb. Ideally I would like a recipe which I could then modify to suit my mood, for example by adding blueberries, bananas or raisins. My quest has been further complicated by the fact that most of the recipes I find are in american weights so I have to first convert cups to grams (or oz) before I can start. I have also found that unsweetened apple sauce appears to be a common ingredient which I have so far been unable to obtain anywhere. I think I may have read somewhere that I could use natural yoghurt instead but maybe that was something else completely different!.
Anyway today, armed with four or five recipes I created an amalgamation of them all and by the time I put them in the oven I was truly fed up - and I also realised that although I did use Stevia they probably contained way too many carbs. Then to my horror I realised that I had completely forgotten to put in any fat whatsoever so I was almost afraid to look when the time came to take them out of the oven. To my amazement they looked quite edible, although the taste test gave me the opini
on that they were a little doughy and needed more sweetener - so its back to the drawing board. As for what damage they do to my BG levels the proof will be in the pudding (so to speak) in two hours when I test it again.
PLEASE PLEASE can one of you fabulous cooks out there give me a simple recipe which uses easily obtainable ingredients (and preferably Stevia so I can use up this HUGE jar), which is written in plain pounds and ounces or even grams - just no CUP measurements please.
