Best diet for a T1 diabetic on an insulin pump?

Hi everyone I'm a type 1 diabetic pump user I have done a dafne course, I'm slightly over weight and would like to know the best diet I could do that would be easy to work out the carbs if making things from fresh as I guess when I don't know the exact carbs. I've tried slimming world but found I was having a lot of hypos and would use a weeks worth of syns when having one I also dealt very hungry when I was doing this. Any advice would be great thank you
