BG level after bad (naughty) meal........

I had a toad in the hole last night.

I made it myself, normal plain flour and semi skimmed milk. Portion was not small either.

I waited 2 hours for the inevitable "15" (or more) to show on my meter, and was surprised to see a relatively "good" 7.7.

Whats that all about then?
 
The fat from the sausage and the oil you used for the tin will probably have altered the GL and slowed down the carb hit - did you test at 3hr or 4hr? - your levels may have been higher then or not dropped by much more- I find this happens with me
 
I had lentils last night a supposedly good low GI food, 2 hours after was 10.2, I like lentils too, had loads of turmeric and cumin in, served with boiled eggs. Running out of stuff to eat.
 
That's interesting. A couple of times lately I have nice surprises with my two hour reading. In both cases there were two cumberland sausages in the meal. Obviously more research has to be done by eating more cumberland sausages. It's tough but someone has to do it.
