Most people's glucose response curve is a single round hump. It could last between a few minutes and 3 hours. However, there are response curves that are trapezoids with bumpy tops. Instead of the usual steady decrease, there are 1 or more new increases. This type of response curve lasts 3 or more hours. These graphs can be found through Google Images, taken from research journals. The only way to learn your response is to take frequent readings (every half hour, say). A continuous glucose monitor (CGM), for those who can afford it, would be ideal.
