Blood glucose monitoring

Hi everyone, I am looking for some advice to try to clarify my increasing confusion. I have tried to educate myself as much as possible but all I seem to achieve is more confusion.
I was diagnosed type 2 about 3 years ago. Initially trying diet and exercise, although I am unable to exercise due to other problems. More recently as I have been told to take Metformin I have been reducing my carb intake to try and avoid the need for medication. I have not been able to tolerate the "usual" Metformin, but also have too many side effects from the prolonged release Metformin.
My query is this:
Should I test at 1 hour after eating to find out my "peak" and adjust my carb intake accordingly, or test after 2 hours to see if my readings have returned to an acceptable level?
Any advice would be appreciated
 
Test prior to eating and 2 hrs after. Certain foods peak at different times depending on GI ( Glycemic Index ) but to avoid further confusion, stick with this.
