Yes, I have a few ideas although I am not saying I know for sure, viz.
Why do we think that the two hour reading is a peak? Low GI and/or protein can extend the time.
Why are we obsessed with the last meal we ate? What about the meal before that? Dr Roger Unger said that he found Beta cells on the gut of mice. If our intestine isn’t wringing nutrients out of our food for a day or so then why have we got 20 odd feet of it.
I have observed my blood sugar rise from 4.9 to 7.9 over a four hour period with nothing to eat or drink.
I also find that I only get properly in control of my sugars by no-carbing for a few days and so “cleaning through” (ahem).
