Blood Sugar levels and breakfast

New member, so this has probably been asked before but I couldn't find anything.

I'm trying to find low/no carb breakfasts. It has to be something I can just pick up and eat, as I'm not a morning person, so I don't get much time.
My reasoning is that I am currently on 2 meals per day at around midday and 7:30pm, leaving a long time between evening meal and lunch. From the testing I've been doing over the past couple of months, my morning readings are usually 7 or 8 but up to around 9 or 10 by lunch. I'm thinking that a small breakfast would help. I'm not a big fan of fruit, I prefer veg.
Any ideas? Or am I barking up the wrong tree?
 
Something made the night before is an option, I thought eggs repeatedly would lead to increased cholesterol though?
 
No, I eat three a day with bacon for breakfast and my cholesterol has never been better since I started a low carb high fat diet.
 
Excellent! I have some eggs in, so I'll start tomorrow morning and see what happens.

Buy sliced cheese like Leerdammer, Gouda or Edam.
Buy slice ham.
Open fridge door.
Remove 2 slices cheese and put some ham between them, like a bread less sandwich.
No plate.
Eat.

It's the easiest, quickest breakfast I know. And it's delicious!
