Blood sugar normal at 2 hours but spikes suddenly at 3

Let me preface by saying I'm still under investigation. My Hba1c came back as slightly but not definitively raised, and my fasting blood glucose is very good at 4.9-5.6 mmol. However its post meal recordings that have me and my doctor worried, to the point that he's confused entirely with what to do with me.

Usually at the 2 hour mark, my sugar can be in the normal range under 7.8mmol or it can be low for some reason at 3.5-4.0. However an hour later, my symptoms suddenly start to kick in. I get breathless, thirsty, my thoughts race, my eyes can blur or my head hurts, and my blood sugar rockets up to between 8-12 mmol out of nowhere. There's no change in my activity and I don't eat or drink anything else, the spike just happens.

As we're worried about my cardiac history too we must figure out if I'm actually diabetic or not. The first two tests say I'm not, but post meal says I at least have prediabetes at best. Very confused!
 
If you are on statins, they can affect your levels. What are you eating in a typical day?
 
Welcome. I don’t suppose for a moment that your doctor has ordered any kind of insulin test?

Unfortunately not on statins yet. My diet is normally some kind of wheaty cereal in the morning like Weetabix or Shreddies, a sandwich and yoghurt simple meal afternoon, usually with salmon, and a meaty meal in the evening like chicken or fish with either veg or chips n gravy.
 
Ok. I am a full blowT2 and so I don't touch cereals or sandwiches as I can't cope with the carbohydrates. The last time I had chips ISpiked 6 hours after eating them. I went to 15 needless to say they are off the menu.

Take a reading before you eat. Another reading 2 hours after and record what you ate. Take another reading 3 hours later. You may see a pattern.

and keeping a food diary (esp carbs and carb portion sizes) will help to spot those patterns.
