Blood sugar spike

Hello, I have recently started using the Freestyle libre 2 which I must say is a game changer. Now I've been using this i can see what happens after I eat, I usually take Insulin 15 minutes before I eat when I feel a food has a high GI but I still get very high blood sugars over 15 even when I try this for about an hour or two after I eat, does anyone have any advice on this matter?
 
I've managed to improve control over night upto tea time the next day. Soon as I have my tea it jumps upto 15-20mmols then I eventually get it into range at bedtime. Tried having my insulin early which just delays my rise sometimes. Working on reducing my carbs. Trouble is when it rises 15+ after tea I wait a while to correct and half the time it will take a dive down to 2 or 3 mmols.
 
That sounds very similar to what is happening with my sugars, I didn't want to cut carbs out my diet due to me already being skinny, not sure how to stop these spikes happening.
 
Unlike normal insulin, injected insulin does not match the food you eat and has a fixed curve over 5 hours. If you eat normally, you will spike your blood sugars. DAFNE says to ignore the spikes and as long as your blood sugars have returned to their pre-meal levels 5 hours after eating, then your dose is correct.
 
Reducing carbs seems to be the way forward. Yeh I couldn't go keto. I'm slim also. Last thing I want to do is loose weight.
If using low carb, up your fat/protein levels plus exercise to maintain muscle/bone mass.
