Type 1 Blood sugars and carbs?

Why, if I eat a small amount of carbs it leaves me with high blood glucose readings. Yet if I eat a large amount of carbs my blood glucose is normal? Carbs in this situation would be bread type carbs.

I take NPH prior to eating and I do sit down and eat. I do not usually test sugars after eating, so it is my sugars prior to next meal. I usually eat about every four to five hours. Where I live test strips are quite expensive so I test prior to eating only unless I am not feeling well. I do not eat between meals.
