Hi Kumar, you don't say whether you are type 1 or type 2?
If type 1, and matching your insulin to food you could eat any of those, as lomg as you have appropriate insulin.
That said I would be looking for less refined carbohydrates where possible to slow the release of sugars into your system. I don't know the vada and upma (may know them by sight), but the idly and puri are what I would call refined carbohydrates.
Are you making your dosa with a mix of rice and lentil flour? If so, these might be the best of the options you've given there. Other good options if you have them would be a bowl of daal.
I'm not Indian by the way, but my wife is, and we had idly and sambar last weekend ourselves.
