Breakfast Suggestions Needed

I'm starting a low carb diet on Monday and think I have things pretty much sorted, the only thing is breakfasts. Three times a week I'll be swimming before work so need something that I can do in a microwave when I get to work, or prepare the night before. Has anyone got any good ideas?

Also, my husband (who is boarderline diabetic) is following the diet with me as he needs to lose some weight anyway. I was just wondering if he can have pitta breads for his lunch? Or whether there are too many carbs in them. He only has half an hour for lunch so needs something quick and easy.

natural yogurt topped with nuts and seeds is lovely. Also there are some low carb cereal and porridge options available if they suit your metabolism. Scrambled eggs also reheat nicely and you could pop them on a slice of low carb toast. I am testing some atkins shakes too and they seem to be ok and taste lovely.

I don't know about pitta breads, they are wheat. It would all depend how he reacts to wheat. I'm ok with mini wholemeal pittas ( I have only one at a time). Also I bought myself a food flask and am now carrying soups etc to work, which are instantly ready to eat. Lovely!

Do you know any brands of cereal / bread that I could maybe try?

I've been having soups for lunch at work anyway, so that's quite good as I'll chop and change with salads.

I'll maybe try my husdand on pitta breads to start with and see how he gets on.

Have a look at www.lowcarbmegastore.com and you will find all sorts there. But like said, keep testing since different people will react differently to different things. For example some of the atkins products contain sugar alcohols which affect some people's sugars quite a lot.

I started low carbing today as well. I wasn't prepared very well this morning so just had cheese triangles wrapped in ham . Hubby had pepperami.
I was thinking of cooking off some hard boiled eggs & also some bacon & sauasages which could be stored in the fridge & then re-heated as required. I like Saz1's idea of yoghurt & seeds as well...

Maybe we should start a "started today" thread??

I have bought myself the 'Low carb gourmet' cookbook. (found on amazon)
Its brilliant and they is a recipe for Flax porridge which is pretty good.

On a working day I don't have time to make egss etc and this stuff is so simple and great with a bit of cream added. :wink:
 
I was wedded to my healthy muesli, not least because I believe breakfast is a meal which should be eaten before you wake up.

My meter persuaded me otherwise.

I stick a small handful of sunflower seeds in a dry frypan to toast while I fetch a large handful of mixed salad and watercress and a couple of olives from the fridge, butter a couple of oatcakes and stick smoked salmon between them, by which time the seeds are done.

For a change I use other types of fish, bacon, chicken and even lamb chops.

What works best for me is high protein, moderate fat, low carb. YMMV of course.
 
How about kippers? The boil in the bag ones are quick and easy if not terribly posh.

I had half a kipper yesterday, a real one (Scottish!) never went near a bag in its life, I grill them

The bagged ones are better than nothing but not nearly so flavoursome, OTOH they don;t stink the kitchen out when you cook them
