Breakfast

I was diagnosed just before xmas ( though i had gestational diabetes x 2)so it wasn't a complete surprise. My main problem is breakfasts. At home I have porridge (2 hours + under 8) which I'm okay with no other cereals eg weetabix, bran flakes agree with my blood sugar (2 hours + 14 +) . Problem is days i work, since I get to work at 6.30 and leave house at 5.40, so too early to have breakfast, when Slim fast cafe latte ( the only one I like) is on offer in packs half price I have this, but its too expensive singly or full price and at the moment its not available discounted so I'm stuck for breakfast , I'm veggie, any ideas?

Does your work have a canteen or is there a local cafe? I have a two hour commute in the mornings so tend to get into work a little early and eat there. I'm not veggie, but will normally have mushrooms, egg, tomato (plus a bit of bacon or a sausage :) ) It normally works out around £1.50 a day which isn't too bad.

I eat porridge practically every day, but make it in the microwave the evening before, pop it in the fridge overnight and then reheat to a suitable temperature the next morning - I can scoff it down in under two minutes :D

You might want to experiment with oats to liquid ratios and bowl depths (I currently make mine with 50g jumbo oats to 270-280g water, and some sweetener, cook for 2 mins 20 secs on high; reheat from cold for 2 mins on high). But most people call that gruel... :lol:

I now make my porridge in the mornings half and half with ground almonds (15g oats, 15g almonds, 2/3cup milk, pinch salt). Bung it in a saucepan on full heat and it cooks really quick - about 2 mins max. It's half the carb because of the almonds too. Stick it on before you get dressed and it wont cost you any time. 15g is about a heaped desert spoon so you don't even have to weigh it.

I don't have a microwave but that may be even quicker.
 
I decied to experiment this mix this morning and got 7.4 2 hours later. Now then - since diagnosis I haven't been able to handle carbs for breakie at all. But it wasn't a fair test as I vac'd/polished the car out, so more active than a normal morning.

So, I'm wondering if:

a) I tollerated this mix as lower carb than straight porridge? I think unlikely, as even the lowest carbs sent my BG up, so gave up on them for breakie
b) I tollerated this mix as my insulin resistance has improved since losing 2 stone and low carbing ?
c) I tollerated this mix as I increased my activity from normal?


Any thoughts?

I am going to have the same 2moro and head straight to work (i drive for a living) to see what it comes out as then.
