Sorry to hear about the gout. I’m sure it’s painful! I only eat about 5 oz protein per day and doing fine As far as cholesterol, for me, carbs raise it as well as saturated fat. However, even when it was highish ( sat fat, lots of red meat) all my ratios were ideal and my HDL was sky high. I was just tested last month and I actually got a written report card that said EXCELLENT. I don’t think I ever had a report card that said excellent! I attribute this to my avocado a day. Seriously. My diet, percentage wise is high in fat but it’s mostly plant fat. Avocado, olive oil, mayo, a few nuts. Mediterranean fats. I don’t eat chicken skin, fatty cuts of beef, loads of butter etc. Recently I quit coffee so I’ve been having broth with a tsp of ghee. But ghee is very healing and it’s a very small amount. Did you run your ratios? To me, that’s the important part and the type of fat matters as well. If you’re using a lot of dairy or saturated fats you could trim those down substantially and see what happens. I’m glad you feel so good!! My mom is 86 and feels great.
