I find almond flour (H&B) makes bread too cakey, and am going to get de-oiled almond flour, mix it 50/50 with Vital wheat gluten, 15g of totally activated yeast, and have a go at a loaf that actually tastes, feels and looks like bread but that is full-on keto.
psyllium husk is a high fibre thing and can turn things purple, so don't worry if you use it and your baking turns a funny colour. I put it and ground flaxseed in biscuits.
De-oiled almond flour is on the web, and it seems to be around £16 a kilo so loaves of keto bread are going to be as much a treat as truffle!
