made some lovley butter biscuist
125g butter
50g stevia
180g coconut flour splash nat vannila extract

mix all togeather then roll into balls flatten bake they are so crisp and buttery i reccomend them i plan tommorow on my nxt batch to half dip in 85pc choc so easy to make and quick to took half hour

Sounds delish. I've got loads of coconut flour left from when I tried the paleo diet last year and didn't know what to do with it so I want to give these a go. What temp and for how long please?

i baked on 200 for 10 mins but keep checking they go brown fast xx

Aw, didn't work. Just crumbled. Can I add an egg do you think? I already had to add more butter than you said 'cos the mixture wouldn't hold together. :(

enjoy them i melted butter in micro first was easier to mix :) xx
I also melted the butter in the microwave first too so I don't know what went wrong there.

i had same pro b the mix to crumbly to roll with the pin . so i took little balls and rolled them in my hand try thst or put mix back in fride until butter solidifies again x

Oh ok. I'll try that Cath. It's a similar recipe to shortbread but without the gluten in the flour, it's not going to hold together I s'pose. :arghh:

Well half an hour in the fridge has firmed them up so if handled with care and eaten before the butter melts again, they do work. I added almond essence instead of vanilla though, 'cos I don't like vanilla. They are certainly a good start on my new diet journey, thanks a lot Cath. xx

awww so pleased for you that they worked . i to was thinking of different flavors for them maybe try orange zet or somthing , you enjoy them lunar and enjoy xx

I've been looking for a basic biscuit recipe so had a go too. I added extra butter, which I softened rather than completely melted, and the mixture was still very crumbly, so I made them into little squashed balls instead of trying to roll them, and cooked them in the microwave. I tasted a bit before I cooked them and it did taste nice, but after cooking, which I rather overdid as I've just got a new microwave - I'm not quite sure of the best settings and timings yet and I made a complete pigs ear of them - they tasted like raw coconut flour with burnt in the middle, and seemed to swell up in my mouth too! :yuck::yuck: I think the birds will be getting them in the morning. I'll get some more flour and then have another go.

I have a somewhat similar savoury recipe with added cheese and milk or water which is also very crumbly but that works fine and holds together if I'm careful! It's a cheese scone recipe in real life but the different flour seems to have turned it into a sort of cheesy shortcake/thick crispy biscuit. I use a combination of milled flax seed and almond or coconut flour for this.

hi it will be my pleasure
i use 4 lemmons juice and zest them
100g butter cubed up
3 large eggs and i egg yolk
sweetner of ur choice

same as you would melt choc on simmering pan with bowel in put the juice of the lemon and zest and sweetner ( now im not keen on sweetner well the aftertaste so i add little and taste to my prefrence)
add the cubes of butter and let it melt
mix the eggs and yolk and add after butter melts on simmer just gently whisk it goes thick quite quick
then when its right test to see if you like more sweeter etc. i let cool and added to tub i spread it on the biscuits today they were yummy , its so easy the curd and nice on bit burgon toast xx
