im not a fan of butternut squash alone so was unsure but figured someone here would eat it but this soup is amazingI'm sorry to say I tried this (or rather my wife made it and I was "encouraged" to try it) and urrgghhhgh. not my thing....
that sounds goodI make butternut squash soup with cream coconut and chilli. Yum ... but then I add chilli to most soups.
They are one of the carbier veg.. 8.3g per 100g be interesting to know how your bloods react..ive just made a butternut squash soup with 2 small potatoes and an onion
it tastes amazing but quite sweet
i know potatoes are a no no but these were tiny
im wondering about the squash
ive just done my BG so will check again in a couple of hours
also added a big dollop of mascarpone hoping the fat content will help some
ive made enough for 3 HUGE mug fulls

I find that adding fatty things like coconut milk to soups, goats cheese / pumkin seeds/ butter etc to roasted squash etc flattens the BS response. B squash on its own sends my sugars too high, but with additions works okthey are one of the carbier veg.. 8.3g per 100g be interesting to hear how your bloods react.
tested at 1 and had weird results on one finger level was 8.9 and the finger next to it was 811.00..... 6.5 (just before having soup)
felt a bit icky at 11.50.....8.9
12.25....7.2
so my levels shot up and then dropped pretty quick
will test again at 1 and see what its like at the 2 hour mark
should also add i feel fine now
