The HBA1C indicates blood sugar levels over 80 to 90 days so whilst your diet in the immediate few days before has a greater bearing on it I believe, a single meal shouldn't and you do not have to fast for this test.

The Hba1c test tests for glycated haemoglobin and is not affected by a meal prior to the test. See the guide to HbA1c here
