Can Anyone Explain This?

I am gradually getting my FBG down, but generally start with 7 or above.
Only been testing for a week, but it seems that the more I eat, the more my BG goes down over the day.

Also, a slice of toast seems to suit me better than porridge as my BG goes down.
When I have eaten 'naughty' foods, my BG goes down, or only rises very slightly
EG had a slice of cheesecake after a meal out and two hours later was up from 6.1 to 7.1.

Am I doing something wrong or misinterpreting these results?
 
Not necessarily.

Sometimes our bodies just behave unexpectedly. With regard to the cheesecake I would ask what else had you eaten and had you tested before the 2 hours and at 3 etc. It may be that you are actually only starting to rise at 2 hours - I see this a lot after fatty foods (2 to 3 hours is equivalent to my 1 hour peak and depends on type of fat).

High Protein causes a very delayed rise and often through the night.

When I high carb I do find I have lower pre-prandials and fastings than when I low carb. But the average against time basically stays similar so higher peaks for longer means lower low for longer.
