Can anyone recommend an almond flour & receipes for muffins and pancakes?

Hello

I am hoping somebody will be able to help, I am looking for a recommended almond flour and receipes for breakfast muffins and pancakes, if you have any suggestion I would be most grateful

I understand that almonds taste a bit like marzipan, so should be fine, I think, to make muffins and pancakes.

Trying to find something I can eat for breakfast as a bit stuck at the moment, can't have cereals and wouldn't want eggs.

I just use ground almond meal. AFAIK the difference is the flour has had the almond oil removed
I also use desiccated coconut for coconut flour
you can put the mix it in a food processor if you want it finer, but I haven't had the need to

I don't own a processor, so will have to make do with it as it is. Never thought there was a coconut flour.

Does it taste very sweet? Both the almond and coconut.
 
I use ground almonds from Aldi, much cheaper and it works well. Both almond and coconut flour actually taste fairly neutral when cooked, so are suitable for savoury and sweet recipes.

A rule of thumb for dry ingredient measures is 1 cup = 120g, but this is not true for everything. There are some accurate food weight/ cup measure charts online if you google it.

I'm looking into the whole 'alternative flour' at the moment and looking at making a mix from various nuts which I hope will work out well for a home made Mediterranean-style walnut loaf

I'll report back with whatever conclusions I make

In the meantime, there are a lot of recommendations online about not using 'just' almond flour as it has other health implications

If I can find a link, I'll post it on here
