Cannellini beans

Was looking at Cannellini Beans. The carb for half a tin drained is 9.2 and the fibre is 5.5-gram o.4 sugar. I may try some. I would not want half a can to be honest but would be nice to put some in a stew or have just a few on the side with a salad. The fibre is quite high. Does anybody else eat these? Would I kick myself out of keto if I do not go over 20 grams of carbs in a day?

Yes, I do - I usually allow for one can divided between three or four portions of casserole or chilli, depending on what else is in it. If eaten as part of an otherwise very low carb meal they are okay. It's the overall carb content of a meal I am careful about. :)

Canellini spike me almost as much as Red Kidney beans but they are lovely in a chilli or a beef stew. I put them in stews now for the family instead of potatoes and they love it so it is a win for them. I'm still looking for a bean to have in chilli (one of my top favourites) and will keep making it without beans but it's not the same.

I wonder why they spike you as they are not that high in carbs if just a few, and the sugar content is low. I may try some, they may spike me also. Just looked at tinned black-eyed beans, they are 4 grams carbs per 100 gram, with 0 point sugar. Wonder if you can eat those?

The spike was over 3mmol with canellini beans for me. The way our bodies react is different and I am tinkering with the idea or possibility that when I tried this I was, at that time, trying desperately to lower my bg from what was an horrendous number and had cut almost every carb I could so was the spike caused by a sudden appearance of higher carbs than I had been eating in the previous weeks (if that makes sense?).
It makes me wonder if trying them again now that my bg is under better control is worth a try...
Thanks for the suggestion re black eyed beans, I shall send out for some.

Garbanzo beans ( hummus) really spikes me but black beans are better.
Now that black eyed peas are mentioned i wonder if it's the smaller beans that are better?
I LOVE chili and last week made a beanless tomatoless one and I used mushrooms to try to get the texture resemblance to beans. Wasn't bad at all. Used hot sauce and a little broth to try to get the chili flavor. All and all turned out pretty good!!

Actually the authentic Mexican version does not have beans or tomato, it is basically what is says, chili and meat, although I suspect it has onions and it often has chocolate. I have had Chili con Carne in a Tex-Mex restaurant near the Mexican border and that's what it was, a hot chili flavoured meat stew, any carbohydrates were sides. I prefer the anglicized version with beans and tomatoes, I use red kidney beans but I am only moderately low carb.

. Good to know!

I prefer that too but tomatoes flair up my arthritis and beans are too carby

I wasn't the same but it will do. It was my first attempt and was quite good.
After it was done I added a dolup of mayo ( no sour cream on hand) which worked well and then some chunks of avocado so after typing this it does sound like a Mexican stew that I never heard of!! I made enough to freeze as well. Yay. It it weren't unseasonable 90 degrees today I'd be eating it!!
It's all ready for the next cold and gloomy day.

Could be as you say. Let me know how you get on with them. Good Luck

I seem to remember that they are the same size as other beans. The black beans are around 18 carbs per 100 if I remember so a lot higher than the black eyed beans.

I make half and half cannellini bean and garbanzo bean hummus with lemon zest and the juice then use the hummus as a sandwich spread, as an ingredient in salad dressing vinaigrette, and as a veggie dip. I add pesto, tomato paste or sundried tomatoes chopped or curry or siracha to switch up the flavors.
