Carb Counting Help

Hi,

My local hospital has no budget for the DAFNE course, so I need to find some similar education elsewhere. Not sure where yet. Are there any good books or literature that resembles the DAFNE way?

My actual question is: Do you count the carbs in veg? I get the impression its a 50/50 answer depending on what veg is in question. If the answer is no; what about popcorn? It comes from a veg; do you count this?

OK, what exactly is a vegetable? Using the Wikipedia definition for the following:

Whilst it ultimately comes down to trial-and-error, you normally would have to count the carbs in starchy vegetables (e.g. potatoes) only.

If the answer is no; what about popcorn? It comes from a veg; do you count this?
Corn is a seed, not a vegetable. I need to count carbs in popcorn. The Carbs&Cals books says that "certain foods which are broken down into glucose very slowly may not require insulin", listing peas, beans, lentils and some vegetables including sweetcorn as examples.

So it's trial and error, sorry.
