Yes we use the same amount of insulin no matter what the GI index of the food is. However, certain low GI and high fat foods we find need the insulin delivered over a longer time, typically with pizza and pasta dishes. With the pump we can programme it to deliver the bolus insulin over a period of time, with injections this is not possible so some people find splitting the dose is helpful. How you split it depends on the food and how your metabolism copes with it, it's a lot of trial and error. The bolus dose can be split with a certain percentage given at the start of the meal and the remaining percentage injected a little later, how much later and what percentage depends on trial and error.
