Carbs and carbs which sugar

I have started a LCHF diet a couple of days ago, to try and lower my readings, I am really confused about the meaning of food labels in regard to (Total Carbohydrates) and (Carbohydrates Which Sugars), is it ok to take a food with say 8og total carbohydrates and only say 2g of which sugars, can anybody shed some light on this, thanks in advance.
 
Forget the 'of which sugars' bit. For diabetics just assume that carbohydrate = sugar. Try and stick with food that has no more than 5 g carb per 100 g whenever you can. Fibre is OK because it is essentially indigestible, but in the UK at least that is usually labelled separately anyway.
