Carbs in yogurt

Your post sent me to look at the Total/Fage Greek yoghurt (full fat version) I eat, and the carbs/sugar content in this is 3.8 gms per 100gms, and the 0% fat version is only 0.2gms more at 4.00gms per 100gms. That's a huge difference to the 19gms of carbs quoted! Both these versions contain the same live cultures (L. Bulgaricus, S. Thermophilus, L. Acidophilus, Bifidus, L. Casei), which stay live until the expiry date. The low fat is made with skim milk, and the full fat with pasteurised milk & cream.

Confusing isn't it!!

It's well over 30 years since I made own and as far as I can remember I used to start if off with a dollop from a bought pot.

I consume vast quantities of Greek yoghurt, some bought ( in 2kg containers...a small bucket), some homemade ( both electric and easiyo). I have been leaving my homemade longer in anticipation of the bacteria eating the lactose). Either way, I don't get a spike from yoghurt and berries and I feel more comfortable eating it than a lot of cream.
Easiyo is just about as simple as making jelly and worth a try for anyone with a taste for yoghurt ( and saving a bit of money)
 
I've occasionally had spikes with berries and yoghurt for breakfast, but not at other times of day... I think there's a little diabetes gremlin lurking somewhere that when I think I've got things sussed, says "Aha, she's complacent, I'll give her a spike or two now..." :eek:

We eat a fair bit of Greek yoghurt, but I don't reckon a bucket full would fit in the fridge...

Yes, I love yog, but have been finding its BG impact disappointing.

(Nothing to do with my inability to exercise portion control, of course)

So this week I made up some Easiyo Greek and coconut, left it to brew 24 hrs, and dug a hole to separate out the whey.

Result - much lower spike!!!

So the obvious conclusion is that now I can eat even larger portions!!! ;)
