Hi Shane!

As you know, I low carb, but I do eat potatoes maybe once or twice a week. I stick to small portions, just one or two small new potatoes sliced in with my mixed veg, or a couple of roast potatoes with my Sunday lunch. It's a bit different for me as I'm on insulin, but I do have to check my BG at 3 or 4 hours as potatoes sometimes cause me a later rise in BG, so make sure you do a couple of later tests to be sure you're not having a delayed BG rise.

I hope you find what you're looking for here Shane, but I do share Desi's concern that lots of different people will give you lots of different advice and you could end up more confused than ever.

Take care of yourself.
