Lots of stuff about it out there on the internet - a lot under carnivore, but it's also called "zero carb" by some. I find Amber O'Hearn is a good speaker on the subject - if you check Youtube you'll find her.

I have read vitamin e is found almost entirely outside of animal food. What are the best animal/carnivore sources thereof?

I suspect that, like vitamin C, there's enough vitamin E in meat and seafood for a human on a zero carb diet. I doubt it's worth worrying about.
