Cauliflower/Broccoli cheese

Hi everyone. I have a question or 10 for you.

Bluetit and other members have advised me to cut down more on my carb intake, which is what I'm going to do starting tonight. I have just spent 2 hours rigorously looking at every packet, tin, bottle, jar, carton and bag that Asda have on their shelves trying to get my head around what I can have and what I can't. My conclusion, tons of veg, olive oil, cheese, fat free, sugar free, taste free yoghurt and bacon (in moderation).
So tonight I thought I might cook up a culinary delight of Cauliflower/Broccoli Cheese with crispy bacon sprinkles (bacon fried in Olive oil).
So my questions are.................
1) Does anyone have a simple recipe for cheese sauce?
2) Am I going overboard adding the bacon?

There was also mention on one of the other threads I have read about battered fish being ok. If so.......................
Should it be grilled, or fried in Olive oil?

Baked beans! Good or bad idea?

Sausages! Yes or No? If Yes, any particular sort or brand?

Lastly (for now),
Milk! Is there a particular milk I should be looking out for, or is normal semi skimmed ok?

Oh just thought. Sorry this is definitely my last question.................... Whilst casting my eyes upon those Asda shelves I noticed a product in the sugar section called "Granulated Sweetener":wideyed: I think I know the answer to this one, but would be interested in what answers come back.

It depends on you as to what you can eat and the only way to find out is to test your blood before and after meals that way you will find out what foods raise your BG. There is no food plan to suit all I'm afraid what one person can't eat another one can it is all down to trial and error

Although you need to test your own reaction to foods, I'd bet my bottom dollar that baked beans even the reduced sugar ones wil be a no no. Some people can manage battered fish from chip shop or a piece baked in oven. It's all about trying and testing.
Cauli cheese is hood and with bacon even nicer. I tend to make a fake sauce with creme Fraiche and cheese and I guess you could add some cream to make it richer. I never make a roux these days but I guess you could make it with soy flour?
Milk I drink soy or lactofree as lower in carbs- whether you switch depends on how much you are drinking of the stuff. Full fat or semi skimmed is lower carbed but not by much so drink what you are happier with.

Go for full fat plain greek yogurt not low fat, tastes better and has less carbs.

Grill the bacon and sprinkle some olive oil on it at the end if you like. Olive oil should not be heated to a high temperature as it then changes composition and a lot of the health benefits of using it are lost. It is not really suitable for frying.

For the cheese sauce, I use half a tub of full fat philly, grated cheese salt pepper a bit of paprika, cook very gently till the grated cheese has melted, pour it over cooked broccoli or/and cauli. Cook in the oven till the sauce bubbles. Bacon is a must, fry till crisp and crumble it with the veg before poring the sauce over.

Cheers pavlosn. I would have fried the bacon in the Olive oil but now I know not to. As for the yoghurt, I'll get some and try it out tomorrow. Thanks.

Hi,

I do the laziest cauli cheese in the world.

I boil the cauli, in chunks. When cooked, you drain it, then leave it how it is, or mash it a bit with the potato masher gadget.
Then I tip in some cream cheese, some grated cheddar, and sometimes some blue cheese, if I am feeling decadent.
Stir.
Season with a dash of mustard or horseradish, pepper and salt (taste carefully, because cheese can be quite salty)
Stir again.
The cheese will melt and go gooey in the heat of the cauliflower. No reason to phaff with making a separate sauce.

Done.

Fab as a potato substitute, or as a meal in itself.
Great with sliced Mattersons sausage.
Works with broccoli too.

Enjoy cauliflour cheese , however you choose to make it ..? Almond milk mustard and a few chilli flakes for me....with a nice bit of strong cheddar ...but mine is the lesser fat cheese ...all nice however cooked ...

Hi Cold Ethyl and thank you for your reply. I will take on board your suggestions and try them out in a controlled and metered way then that way I'll see which suits me best.

OMG.................how easy is that!! My kind of cooking.
You mentioned "Mattersons sausage".............did you mean a full one as in the whole horse shoe??............I hope so.:D

Mattersons sausage yes the u shaped one. Lush when cut into chunks and microwaved for 2 mins. Drooling now

Ha ha ha. I wonder how many people will be having Cauliflower/Broccoli cheese tonight with Matterson sausage:joyful:

Another good sausage to have with bacon and eggs are the Black Farmer Premium Pork. They are 90% pork, and only 1g carb per sausage. Lovely, thick and spicy. (a bit like me!) ;)

Into the kitchen forthwith ...
I make white sauce with butter & buckwheat flour, which isn't wheat, and full cream milk, and add mustard powder and cheese.
Bacon is great.
I can't eat battered fish. Well, I can if I want a spike over 12 from 5.
Don't cook with olive oil. Use it on warm salads, esp. tomatoes & olives.
Baked beans might be ok for me if I rinse them off but what's the point? I can cook haricot beans and make a much nicer tomato sauce for them.
Sausages spike me. I can't find a whole-meat one I trust.
Milk has to be full cream for me. Better still, double cream (no carbs).
Sugar .. I use xylitol, which is made from birch trees. Just because it's weird. But also nice. And supposed to be good for me.
