Have a go with some celeriac too. Peel it, dice it, boil until you can pierce the dice easily with a fork (10 minutes or so) and then mash or process it with some butter and a few gratings of nutmeg.
It's an ugly knobbly looking thing, but beautiful on the inside, much like myself. You'll find it in the vegetable section of most supermarkets beside the turnips and root veg.
It's a great, low-carb, very versatile vegetable.

Yes, I make a sweet potato and red pepper soup which is rather tasty.
I love butternut squash too. I dice that and mix it with red peppers, courgettes and red onions and cook over the barbie, in the summer.If only we had more barbie weather in the U.K.!
