cauliflower recipes

I'm finally going to try cauliflower "rice" and cauli "mash". I'm not the world's best cook and somewhat impatient, so would prefer to get it right first time...

I gather for "rice" I need to fry the cauliflower. Do I then grate it, or just break it up with a fork?

For "mash", do I fry the cauliflower, or boil in a saucepan? How soft does it need to get?

For both - does microwaving work? Am I just cooking the florets or the stalks too? (My pet rabbits want to know if they can still have the raw stalks!)

Any tips gratefully received.
 
I steam the cauliflower then mash it for mash.
For 'rice' I grate the raw cauli,well put it in a processor actually and grind it into rice,then I microwave it with butter .Mine is a 650 microwave and I cook it 3 minutes covered then 3 minutes uncovered to dry it.I also add chives(I love chives) and a dash of maggi seasoning.I know that Fergus used to stir fry his and I expect that is just as good.There is a recipe for it somewhere in the low carb recipes.
 
Thanks Sue. I did search before posting, but could only find mentions of cauli mash/rice, no actual instructions. I'll try your suggestions tomorrow/Friday.

GP put me on some tablets for something else. She warned I may need to reduce my insulin, which was a concern in view of already small doses. However, the new meds have the delightful side-effect of making me need at least double insulin with food, yet little effect on basal dose. Usually my appetite disappears at bs of 9, but the tablets are making me ravenous too even 2 hrs after lunch with bs of 17!! Thankfully its only temporary, but methinks the time has come to try spud/rice substitutes.

They are Norethisterone, for 'women's problems'. 3 weeks on, 1 week off, for 3 months. The pack insert just says if diabetic, 'medication adjustment' may be needed. But the GP computer flagged up the interaction and the GP was clear that she was warning about possible need to reduce the dose. Probably being over-cautious in case of unexpected hypos I suspect, but bs staying up much longer after eating (and some serious attacks of the munchies) will wreck my HbA1c just when it's due to be done for clinic review in June :(

I won't be taking them longer than 3 months whatever the doc says.

There are so many interractions between the endocrine system, hormones etc. it may well be your body has chosen to react in the "wrong" direction.

* Diabetes mellitus (sugar diabetes)—Use of oral contraceptives may cause an increase, usually only a small increase, in your blood sugar and usually does not affect the amount of diabetes medicine that you take. You or your doctor will want to test for any changes in your blood sugar for 12 to 24 months after starting to take oral contraceptives in case the dose of your diabetes medicine needs to be changed

Look like your body has chosen to react in the right direction but more strongly than expected.

At least you can control the effect with insulin.
 
LOL Wouldn't be the first time my body's done the opposite of what's expected. But I spoke to my DSN and she said this (high after eating but little effect on basal) is exactly what she'd expect, it happens if T1 women go on HRT.

I too thought okay, just increase the dose, but its not quite so simple. Overnight control is good with just half a unit extra. Doubling the dose with food helps, but however I tweak it bs still stays up longer than usual, then plummets before next meal. Despite factoring in a mini snack to counteract the drop, still had a bad hypo whilst shopping alone on Saturday, symptoms out of proportion to bs level. Scary!

Tried the cauli mash on Friday. Started to taste quite good when I added Worcester sauce, though consistency a bit watery and it was still clearly cauli with sauce. Will persevere though.

Sounds a but like it may be pushing your cortisol a bit like steroids. Sympathies, I'll leave it for other Type 1s to make suggestions.
