Cauliflower "Rice" Recipe

Another one from the low carb book I mentioned. Texture like rice, but tastes better.

1 cauli
2 garlic cloves
2 spring onions
60g Butter (I found this to be too much so used 30g butter and a splash of olive oil instead)

Grate the cauli using the grate setting on a food processor. Squeeze the water out by taking a handful at a time, squeezing with your fist then transfer to a bowl. This step is important as it will be too watery otherwise. Thinly slice garlic width-ways then fry in the butter/oil with the cauli and spring onions.

24g of carbs per cauli. Its delish, going to be a staple!
