My friend, who isn't diabetic, is following a low carb diet. She recommended grating cauliflower and steaming it as a replacement for rice. I was rather sceptical but last night made my own chilli and tried it out. It was great. The texture was almost the same and there wasn't an overpowering cauliflower flavour. The only downside we found was it made the washing up water all bitty.
