Celeriac chips

Was this really three years ago?

Just bought a(nother) deep fat fryer.
Small one from Argos for £15.99.
Small enough to do single portions and not take up too much space.
The big stainless steel one is in the loft.

This time I parboiled the chips for 3 minutes, drained them on kitchen paper on a rack, then fried them until darkish brown and floating.

I'm still trying to get them crispy and not too fibrous but they are nice in a Low Carbohydrate roll with butter and a touch of brown sauce.

I shall see what they do to my BG.

Made extra to go in the fridge and then try reheating them.
