Cherry pie filling

I found a recipe for a black been chocolate cake that is moderately carby. I'm looking to do a black forest cake with this but don't want to use a regular tin of cherry pie filling. The sugar in a tin of pie filling would make any one diabetic (as my Mom would say). Does any one have any suggestions for trying to make a lower carb version of cherry pie filling? Would something like chia seeds after mashing some cherries thicken it enough? Would that add enough fibre to them to slow down the sugar intake?

Thanks.

It's not the sort of thing I would make, but a quick Google of "Low Carb Cherry Pie" returns loads and loads of options. Some will be better than others, but there'll be something there, for sure.

Look no further than our own Ewelina's Diabetic Good Baking Blog for a recipe which includes both cake and a DIY (Black) cherry filling.

For cheap and cheerful, I make myself "Black Forest Muffins" with a mix of cocoa powder and ground hazelnut and ground almonds for flour. I add a few fresh or frozen black cherries to each case in between two dollops of my chocolate muffin mix, and use thick cream, or cream cheese with cocoa and sweetener, to make a topping or filling for them, and often include the cherries in this rather than in the muffins themselves. At Christmas my husband got me a jar of black cherries in kirsch (Opies) which was very yummy. Defrosted black cherries are easy to chop up as they've had their stones removed, and likewise the alcoholic ones... Perhaps not too authentic but it works and I could "posh them up" a bit if I ever made them for visitors, though I'd probably try Ewelina's version instead!

@debrasue made an amazing black forest gateau recently based on Elwina's recipes. She might be able to give you the link to the thread

I agree with Robbity - Ewelina's Black Forest Gateau is a winner!

Xanthan gum is what you need, I think...

Thanks for all the options. My google must be broken as my low carb cherry pie filling didn't result in that many options and none available locally. Then then again that's small town for you.

Thanks for the links and the suggestions. Sounds exactly like what I'm looking for.
