I made the cake up again - this time with unsalted butter and flavoured with cinnamon and coffee. I may have also put some xylitol in . I baked the mixture in muffin tins and froze the little cakes just getting out what I need. At the same time I made a batch of the Durkin muffins (with oat bran) which I also consider are low carb and always rise and are very successful. I have found that these are nice if you slice down the middle and put cream cheese in. Makes them taste like cheese cakes!!
