Maybe google keto with ibs to find some readable stuff? I'm not a doctor, and my IBS isn't anywhere near as bad as yours, but these are the first things that sprang to mind. If I got something wrong, I'm sure someone'll be along to say so. Personally, I have to stay away from seeds like chia and linseeds because my bowels will turn into the 7th circle of hell, but that's about all I have on offer for you right now.
