Hi again HpprKM, in education too....me as well but no students with diabetes although when I mentioned it to my students there were a lot with diabetic parents.
I am overweight and smoke :? and have introduced slightly more fat into my diet and my cholesterol is fine....it's weird how it alters from one person to another, but I know that sometimes in low fat stuff they up the carbs somewhat so it affects my BS. When I went to see the endo, my blood pressure was shocking and my my weight is something to be desired he smiled sweetly at me and informed me he was going to take my bloods for my cholesterol etc levels and he would have to put me on statins as given all other factors my cholesterol would be shocking too...ha ha that backfired as my trigs came back very low
Thanks for the advice on the bread I will have a scout around as I have to admit I take salad to work and then ignore it at lunch time  I have tried burgen bread which claims to be low GI but it had quite an effect on my levels, but that was a while ago when they were still in double figures. Need to experiment again now they are more under control and see what happens.
