Counting Carb Question

Hello!

Okay so I've got the Collins carb counter booklet in frount of me and there is a column for carbs (g) and a column for Net carbs (g). The net carbs seems to be the gross carns minus the fibre (g) so my question (actually questions!) are thus: Which carbs do I count? Is it carbs minus fibre? Do carbs from fibre count towards affecting bs levels? And if they don't count then does this not make things awfully complicated when counting carbs on packaged foods which don't tell you the fibre content?

On British tables, they list the Available carbs. American ones list total carbs, which includes fibre. Americans get used to subtracting the fibre. British list fibre separately.
Chemically Fibre is a carbohydrate in that it's formed from Glucose monomers and contains only Carbon, hydrogen and oxygen atoms., but the linking is a type for which we don't have the appropriate "undoer"enzyme. That's basically why we can't eat grass. Even many herbivores require the help of microbes to break down cellulose to a usable form. Ruminants keep their microbe "helpers" in one of their stomachs. Rabbits have the Caecum and appendix. I can't remember any more without looking it all up. Still, since Whole grains contain much fibre, you can see why I , among others, think they are not a suitable food for us. Only good once processed by a cow.
 
just use the total carbs - most of the fibre is not absorped anyway . personally i prefer the Carb and fat bible - it is laid out in a much simpler way
