Decreased insulin resistance?

Recently started testing bg again after 2 months break. Last week my bg was 6.1 one hour after 2 pints of Holsten Pils, pork chops and a large amount of mediterranean veg, cheese and an apple (and 3 glasses of red wine! - special treat). Yesterday it was also 6.1 one hour after eating a load of rubbish at my grandson's birthday party ( pizza, sandwiches, crisps, very small piece of chocolate cake). Could it be that my insulin resistance has decreased? Since being diagnosed at the beginning of the year I have been on a low carb diet and metformin 1 x 500g off and on. I''ve also lost 3 stone. I reduced my HbA1C from 7.1 to 5.5 in 2 months and my trigliceride from 3.0 to 0.5 in the same time. I'm now about to slowly increasing my carbs hopefully to about 60-70g per day. Has anyone else experienced this?
 
It could well be to do with your weight loss but it could equally be that you are testing too soon after eating especially when drinking as the alcohol will stop your liver from releasing glucose or after eating pizza or other fatty foods as they will slow down stomach emptying so your peak will happen later than normal.

Thanks Sid. No alcohol with party food and my pattern tends to be peak at 1 hour with most food and drink. Hope my insulin resistance has improved but who knows? This affliction is a strange thing.
