Delicious curry

soaps on telly and people talking about the characters as if they were real.
i was reading the other day on this forum that some epople were missing curries. trhis recipe is ALL MY OWN WORK, but we love it and although i can't get a definitive on the carbs in green lentil, I certainly didn't put my BG up
Recipe is pretty much as you like it.


Green Lentil Curry for 2-3 persons
First put 100g green lentils in a pan with plenty of water and set to boil for about 30 minutes. Don't add salt it makes lentils go tough.
the sauce
One largish onion finely chopped fry in good oil in pot.turn heat down
add a crushed clove of garlic [or 2 if you like. Don't let garlic burn keep a cup of water nearby and pour some in if the garlic starts to burn, called slaking].
add curry powder about 2 teaspoonsfull and fry until smells heavenly.
add crushed seeds of about 12 cardomom pods and about a couple of cubic inches of grated ginger. keep frying as smell gets even better. slake if it threatens to burn. If you have favourite spices add now.
when spice mix with onions and garlic is done, add a can of chopped tomatoes, plus a couple tablespoonsful tomato paste. Taste and season . I like to add Worcester sauce or brown sauce.
When lentils are tender, drain and pour in to sauce. Allow to heat gently for a while until flavours meld.
serve as it is in a bowl with green salad on the side.
Curry can be made in bulk and frozen. Exact quantities don't matter.
I don't care for coriander so don't add it. Obviously you can.
Tasty, low carb, high in soluble fibre and cheap. Who could ask for more?

Recipe is pretty much as you like it
My packet of Puy green lentilles says 60.2 g carb per hundred grams.(uncooked weight.
However the GI is very low. According to Montignac (can't find it on the Sydney data base) the GI is 25.

I certainly don't count the full carb value for them when calculating insulin, (don't do it scientifically either, just guestimate how much to reduce it by)
 
You could serve it with

I don't think I've ever been able to leave a recipe as it stands, so I tweaked this recipe too;

Once you've got your minced cauliflower, melt a good knob of butter in a frying pan with about 2 tbsp of coconut oil. To this add 1tsp of Turmeric and half tsp Black Onion seeds. Then add one small finely minced onion. Cook until the onion is translucent. Stir in the cauliflower. Keep stirring until the cauli is well mixed in and yellow. Then turn down the heat and cover. Leave to cook for 10 to 15 minutes, stirring occasionally to prevent sticking. Season with salt & pepper to taste.

We were talking about it over dinner and we think you could tweak to suit the meal; stir in some chopped coriander and some cumin to serve with chilli, or some basil/oregano, garlic or pesto for a good pasta sub. I bet you could do a brilliant version to go with chinese with a bit of five spice etc.
