Diabetes.co.uk recipes - a question

I have just down-loaded the 7 day recipe book and I must start by saying the recipes do look lovely. I do like a good curry and spelt pancakes for breakfast. What I don't understand is that if you sum the calories consumed in a day it only comes to approximately 1000 - this is under half what an active male in his early 50s needs to consume. So how do I up that calorie total without eating 'bad' quick burning carb calories? I do not need to loose weight.

Hi Stephen,
I haven't downloaded the recipe book so I can't speak for the details but, in general, if you've hit your carb limit and are getting enough protein then hit the fats! Add olive oil to your veggies, mayo to your salads & butter to your stir fries. You'll be surprised how quickly the calories add up without touching the old blood sugar. And it needn't be too harmful to your cholesterol either.

You could also look at slow-burning rices and stuff, but my preference is very low carbs and high fat.
